The article discusses the application of life cycle assessment (LCA) to determine the environmental indicators of products. It is shown that at present the LCA is one of the main tools of Integrated Product Policy, which is developed at the European Union and represents a system of interrelated policies and practical tools to reduce the environmental impact of a food supply chain. The features of the LCA method, its advantages, limitations and prospects in relation to food production are discussed. The results of the LCA methodology in the baking industry are shown.
