Application of the «hot spot analyses» to improve management efficiency of the enterprise and determination of significant environmental problems

The food sector consumes a significant amount of resources. In the food and beverages account for about 15-30% of the total load on the environment [1]. Food is often less resource-intensive than the production of other industrial products, but in this industry increased complexity in the structure of production and transport, which leads to a higher resource consumption of the food chain as a whole. [8] Hot Spot Analyses (HSA), developed by the Wuppertal Institute, Germany, is a tool for preliminary assessment, which focused on the need for sustainable decision-making processes that contribute to the definition of priority areas («hot spots») in complex value chains and adopt effective management measures in companies. This technique is a qualitative research method, which is based on the consideration of the life cycle of the creation of a product or service «from cradle to cradle» [9].Based on literature reviews and discussions with experts from the information provided by the interested parties were identified and assessed hot spots of sustainability indicators for the entire life cycle as an example of apple juice «Dobry».
