The paper provides an analysis of innovative approaches to the management of quality and food safety in the food chain on the basis of the most widespread international standards. The performed survey confirms possibilities of strengthening measures of quality and safety management in the food chain on the basis of private standards of retailers, their associations and other non-governmental organizations.
